Evaporated milk , known in some countries as unsweetened condensed milk, is a stable canned milk product with about 60% of water removed from fresh milk. This is different from sweetened condensed milk, which contains added sugar. Sweetened condensed milk requires less processing because additional sugar inhibits bacterial growth.
This product takes up half the space equivalent of nutrients in fresh milk. When the liquid product is mixed with a proportional amount of water, the evaporated milk becomes the equivalent of fresh milk. This makes evaporated milk attractive for purposes because it can have a shelf life of months or even years, depending on the fat and sugar content. This makes evaporative milk very popular before cooling as a safe and reliable substitute for perishable fresh milk that can be delivered easily to locations where there is no safe means of storage or milk storage.
This process involves the evaporation of 60% water from milk, followed by homogenization, canning, and heat sterilization.

In the 1920s and 1930s, vaporized milk became widely available in the market at low prices. The Christian Diehl Brewery, for example, entered the business in 1922, producing Jerzee brand evaporated milk in response to the Volstead Act. Several clinical studies from that time period showed that infants fed infant formula evaporated and breastfed babies. Modern guidelines from the World Health Organization consider breastfeeding, in many cases, to be healthier for infants due to colostrum in early breast milk production, as well as the specific nutrient content of breast milk.

The evaporated milk is homogenized fresh milk where 60 percent of the water has been removed. After water is removed, the product is cooled, stabilized, packed and sterilized. It was commercially sterilized at 240-245 à ° F (115-118 à ° C) for 15 minutes. Little caramel flavor is produced from the high heat (Maillard reaction), and the color is slightly darker than fresh milk. The evaporation process focuses nutrition and energy of food (kcal); unapponstituted evaporated milk contains more nutrients and calories than fresh milk per unit volume.
Reconstitution and substitution
Evaporated milk is sometimes used in reduced form, in tea or coffee, or as a topping for dessert. Evaporated reconstituted milk, equivalent to normal milk, mixed 1 part with evaporated milk volume with 1 1/4 parts water. Where evaporated milk is required but not available, it can be replaced by boiling 2 1/4 portions of fresh milk to 1 part. A comparable result is obtained by boiling two parts of almond milk.

Section (b) - (f) of the above code regulates the addition of vitamins, optional ingredients, analysis methods, nomenclature, and label declarations.
Malaysia and Singapore
It is added in tea and coffee brewed to make Tea C and Coffee C respectively. The C used in these names is due to the general association for the Carnation Evaporated Milk brand.
Dutch and German
It is widely used as a bleach or creamer for coffee.
Latin America
It is widely used for dessert, added to coffee, tea to make rich leche con cafÃÆ'à © or West Africa
This is a staple dairy product that is widely used in tea, coffee, pap (local pudding), hot and cold chocolate and is also consumed as its own drink.
Age save
The shelf life of evaporated canned milk varies according to the added content and the proportion of the fat. For ordinary unsweetened products, fifteen months of age can be expected before any real destabilization occurs.
