History
The use of maize (corn) in cooking comes from Native Americans, who first cultivate crops. Cherokee, Chickasaw, Choctaw, Creek, and Seminole cooks introduce one of their staples into Southern cuisine: corn, whether ground into food or chalked with alkaline salt to make porridge, in Native American technology known as nixtamalization. Cornbread is popular during the American Civil War because it is very cheap and can be made in different sizes and shapes. It can be made into a high, fluffy or just fried bread for a quick meal.
To a greater extent than anyone realized, some of the most important food dishes that Southeast Indians live today are the "soul food" eaten by black and white Southern people.... Indian boiled corn bread is present in Southern cuisine as "cornflour dumplings",... and as "silent puppies"...
Hushpuppies maintain a strong relationship with the Southern United States, although they are also available throughout the United States in restaurants serving fried seafood.

Name
The first use of the word "hush-puppy" was recorded in 1899. This name is often associated with hunters, fishermen, or other chefs who will fry some basic corn meal mixes (probably because they've coated the bread or hit their own food with) and feeding their dogs to "let the pup pets" down during cooking or French fries. Another legend date dates to the Civil War, where Confederate soldiers are said to have thrown fried cornbread to quell their dog barks.
Characteristics and preparation
Typical hushpuppy ingredients include corn flour, wheat flour, eggs, salt, baking soda, milk or buttermilk, and water, and can include onions, spring onion, garlic, whole corn, and chili. Sometimes pancake dough is used. The dough is well mixed, adjust the ingredients until thick, and drop a spoonful at a time into the hot oil. The small breads are fried until the golden brown is crisp, and cooled. Hushpuppies served with seafood or grilled food. They are generally made at home or served in a restaurant that advertises home-style food.
Caribbean
In Jamaica, this kind of fried bread is known as a "festival", and is made from flour and cornmeal dough, in addition to salt and sugar, which is then shaped into hot-dog rolls and fried. They are sweeter than hushpuppies, which often contain onions or garlic. They are served with mashed meats such as pork or chicken. Mostly, served with fried fish or escoveitch (see also escabeche and ceviche). In Puerto Rico, hushpuppies take the form of short sausages and are called "sorullos" or "sorullitos".
